The Refreshing Green Juice
Gypsy Hello! These days one of my friends and I want us toget fit and healthy and leave behind the drinks and junk food. If you too are looking for a green juice that is not too strong to start your detoxification, look no further! This brew is incredibly refreshing thanks to apple, grapefruit, lemon and mint leaves. It is one of my absolute favorite to kick off a healthy, fresh start to my day forms.
- 1.5 Green Apples
- 3 Celery Stalks
- 5 Large Spinach Leaves
- ¼ Grapefruit, peeled
- Ginger, square inch
- 7 Mint Leaves
- 1 Lime
Cut all of the ingredients according to the requirements of your juicer, JUICE, squeeze juice of 1 lime, pour over ice and enjoy!

- juice from 1/4 a lemon

- 1/4 tsp fresh grated ginger

Asparagus is past its prime in New England but I am looking forward to fresh corn on the cob and eggplant.
Green Smoothie - 1 cup baby spinach, 1 cup kale, 1 pear, 1 ½ cup of orange juice, and 1 frozen banana.
Chocolate Peanut Butter – 2 TBL unsweetened cocoa powder, 2 TBL peanut butter, ½ banana, 1 cup almond milk, ice.
Mango Ginger — 2 cups frozen Mango, 1 cup frozen raspberries, 1 banana, ¼ cup chopped ginger, squeeze of lime, yogurt.
Strawberry Date — 1 date, 1 ½ cup frozen strawberries, 1 cup almond milk. Optional: 1 scoop protein powder or 1 TBL of flaxseed oil.
Don’t forget to check the orange juice-make sure it is organic and not “from concentrate”. Also check the sugar level - you are getting ALOT of sugar from the other furit.
I add Flax oil and powder whey protien (if I use a smoothie as a meal replacement)
Get Your Greens Smoothie
Who knew it could be so easy and delicious to incorporate greens into your morning routine?
1 1/2 cups plain almond milk, rice milk or hemp milk
1 1/2 cups packed baby spinach
1 1/2 cups frozen cherries or berries
Combine all ingredients in a blender and puree until smooth. Pour into glasses and serve.
Per serving (about 10oz/293g-wt.): 120 calories (20 from fat), 2.5g total fat, 0g saturated fat, 0mg cholesterol, 140mg sodium, 24g total carbohydrate (4g dietary fiber, 20g sugar), 3g protein
Spinach Lasagna Rolls
9 lasagna noodles, cooked
10 oz frozen chopped spinach, thawed and completely drained
15 oz fat free ricotta cheese (I like Polly-o)
1/2 cup grated Parmesan cheese
salt and fresh pepper
32 oz tomato sauce
9 tbsp (about 3 oz) part skim mozzarella cheese, shredded
Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish. Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles. Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls. To serve, ladle a little sauce on the plate and top with lasagna roll.
