21st DecemberGingerbread Cookies (Christmas Baking)
1/2 cup sugar
3/4 cup molasses
1 teaspoon cinnamon
2 teaspoons ginger
1/2 teaspoon cloves
1/4 teaspoon nutmeg
1/2 teaspoon salt
2/3 cup butter
1/2 teaspoon baking soda
1 egg
3 1/4 cups flour
1. In a pot, combine sugar, molasses, cinnamon, ginger, cloves, nutmeg, and salt. Cook and stir over medium heat until boiling.
2. Remove from heat and stir in butter and baking soda until butter melts.
3. Cool mixture for 5 minutes then add egg and flour and mix well. Cover and chill 2-24 hours.
4. Preheat oven to 350°F and line baking sheets with parchment paper. Divide dough in half, keeping the remaning half chilled while rolling the other piece between sheets of wax or parchment paper until 1/4” thick.
5. Cut out desired shapes and bake until firm and golden brown, 8-10 minutes. Let cool a bit on pan then cool completely on wire racks.
6. Decorate with royal icing and candies!
Royal Icing
1 cup icing sugar
1 tablespoon meringue powder
1 teaspoon almond extract
water
In a bowl whisk together icing sugar and meringue powder. Whisk in almond extract and 1 teaspoon of water at a time until icing is still thick but easy to pipe. Place in piping bag with writing tip, or use a sandwich bag with the corner cut off.

This is the icing I use for all my sugar cookies.
Ingredients
- 2 lbs powdered sugar
1/3 cup light Karo corn syrup
1-2 TBS (yes, tablespoons) of clear vanilla (I use Wilton vanilla that is not that potent. You may need to adjust quantity if you use another brand or other flavoring.)
2/3 cup milk (This is for flow consistency. Add milk slowly and adjust to desired consistency.)
Instructions
- Mix everything together at a low speed until it is fully blended. Do not whip it as it will creat bubbles that will show up in your finished cookie. I store this in the refridgerator for about 1 week. It needs to be room temperature to ice your cookies as the refridgerator will make it appear thick and you may inadvertantly over-thin it. When I want a really white-white, I use Wilton icing white (just a couple drops).
This dries enough to stack and pack. It freezes well when on the cookie and the colors do not bleed. This one is my favorite recipe! Tastes TONS better than straight royal icing. - 2 lbs powdered sugar

Lemonade Template
Cookie Dough
Royal Icing
Circle cookie cutter (use any desired size for the lemon slices, I used a 2-inch circle)
Food coloring (blue, yellow, black and white)
6 disposable frosting bags
5 couplers
5 decorating tips (sizes “2”s, “3”s and “4”s)
Rubber bands
White rolled fondant
Red food coloring pen
Yellow sprinkles or sanding sugar*Find frosting bags, couplers, tips, the cookie cutter, fondant, and sprinkles in the baking aisle of the craft store. For the food coloring, I recommend Americolor Soft Gel Pastes (Sky Blue, Egg Yellow, Super Black and Bright White) and
Americolor Gourmet Writers. -

I am lucky to be able to bake and create! I was asked to do cookies for a girls hockey team. The colors are orange and black. The tiger is a royal icing transfer - had some trouble with drying. I think I added too much liquid. I could not find a hockey jersey cookie cutter in short notice so I made a template out of paper.
