I made the peanut butter cup cupcakes you posted on your blog. I omitted the coffee/instant espresso to make them more kid friendly (they’re for a bake sale). They turned out excellent!!

Cotton Candy Cupcakes!
I loved going to the fair when I was little, not cuz of the rides but because of the sweets! (is there any wonder why I have this blog?) I specially loved buying cotton candy at the fair cuz it was one of those sweets you just couldn’t get any other way. I love that now with this recipe I can combine two amazing sweet things: cotton candy and cupcakes! Enjoy!
Recipe:
Yellow Cupcakes
- 1 cup unsalted butter
- 2 cups sugar
- 1 1/4 teaspoons vanilla extract
- 4 eggs
- 3 cups sifted cake flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- cupcake liners
Preheat the oven to 350 degrees F.

6th MarchA favourite of mine is Key Lime Pie. Awhile ago i found this recipe online and just recently tried out. It is a very easy recipe and even more delicious. :)
Key Lime Pie CupcakesIngredients:- 1 white cake mix
- 3 eggs
- 1 c. half and half
- 1 can sweetened condensed milk
- 6 Tbs. Key Lime Juice ( I used lime juice)
- 4 Tbs. Grated lime peel (about 2 limes for garnish)
Baking Instructions:- Mix together cake mix, eggs, half and half, and 3 T. key lime juice. Pour 1-2 T. of cake batter into each cupcake paper liner. In a separate bowl, mix sweetened condensed milk and rest of the lime juice. Evenly divide lime milk into batter-filled cups. Tops with remaining batter until 3/4 full.
- Bake at 350 degrees for 15-18 minutes or until cake springs back when touched lightly. Remove from oven and cool completely on a wire rack.
- Frost cupcakes with frosting and garnish with grated lime peel.
